For nearly 35 years Le Gavroche has been one of the finest restaurants in London, serving exquisitely balanced food in the classic French tradition. Founded by Michel and Albert Roux, and now run by chef Michel Roux Jr., its pre-eminence is celebrated in Le Gavroche Cookbook, a superb collection of 200 dishes from the restaurant's recipe books. The book is organized seasonally, with an emphasis on the freshest and finest ingredients (if you're going to try to cook this type of food, you have to buy the best--there's no point otherwise). Gulls' Eggs with Caviar, Roast Black Leg Chicken with Fresh Pasta, Foie Gras and Truffles, from the Spring section; Stuffed Sea Bass with Fennel, from Summer; Lobster Soufflé with Quail's Egg and Brandy and Rich Braised Stuffed Hare, from Winter: this is luxurious and expensive cooking. Challenging, too. Michel Roux Jr. doesn't give much in the way of guidance for the inexperienced but ambitious cook: the instructions are plain to the point of austerity but assume a considerable degree of skill and familiarity with the procedures of classic French cuisine. When brothers Michel and Albert Roux launched London's Le Gavroche in 1967, it was just another outpost of French cuisine on the English side of the Channel. By 1981 the restaurant had moved from Chelsea to Mayfair, garnered three Michelin stars, and become London' finest and most expensive dining establishment. Other chefs and restaurants followed, and now London's food is quite as good as Paris'. Michel Jr. has set down his father's and uncle's recipes. Le Gavroche Cookbook documents some of the restaurant's greatest achievements, including the legendary Souffle Suissesse, ethereal islands of cheese and egg floating in rich cream. A serious book for serious cooks

Established in 1967 by brothers Michel and Albert Roux, Le Gavroche once and for all knocked soundly on the head the internationally-held notion that there was no good food to be had in Britain. Of course, there are some who still believe that, but these are also the kind of people who believe that the earth is flat.
Since their publication of New Classic Cuisine in the late 1970s, the Roux Brothers have been household names in Europe. When I was just beginning to seriously expand my culinary horizons in the early 80s, this book was the Bible. To a large extent, it still is. Fads come and go, but for me, there will never be a replacement for New Classic Cuisine.
This excellent new book by Albert Roux’s son, Michel, who has been running Le Gavroche kitchen since the early 1990s, is a worthy addition to the Roux Brothers' culinary canon. No one has ever accused the Roux Brothers of being shy or self-effacing: they know their place in the here and now, and are doubtless confident of their place in history. Michel Jr. is equally certain of his greatness: witness the celebrity autographs which crowd the end papers of this handsome volume, and the cartoon rendition of the chef’s bearded visage fired onto every presentation plate that is put before a diner. Vanity or good humor? It’s probably not worth arguing over, because the food is really all that matters. With cuisine as exciting as this, one can forgive all kinds of egotism.
This excellent book is divided into seasons. Many of the ingredients are hard to find, especially in the United States, and would require a special effort to locate. That’s the nature of this kind of cookery, though. If you want to eat the best food, you need to order the finest ingredients. Many of the recipes are complicated, and require considerable experience, so this is definitely not a book for beginners.
Stylistically, the cuisine represented here is an innovative blend of classic Gavroche infused with a healthy dollop of Pacific Rim, fusion-style cooking. Modernist dishes like pan-fried foie gras with spiced breadcrumbs or smoked eel and carrot salad sit comfortably alongside such classics as souffle suissesse or roast rack of pork with a charcuterie sauce. If you aren’t planning a visit to the UK for a while, but have an interest in sampling the best of that land’s cooking, you could do a lot worse than shell out $... for this book. Of course, the ingredients and the cookware required to do these recipes justice will probably cost about the same as a plane ticket and lunch for two at this outstanding restaurant.

Incredibly useful

I have used several adaptations of the recipes in this book at work and at home cooking for friends.The recipes are straight forward and don't require an incredible amount of skill. Your personal finesse will decide wiether you can execute them well or not as opposed to your skill level as in the case of most cook books.

The authors analyze and present, mostly in color, more than five hundred examples of Chinese sculpture, dividing China’s rich and complex sculptural legacy into two parts—secular (tomb and mortuary art) and religious (Buddhist, Confucianist, and Daoist art). Throughout, the authors highlight the inventiveness, purposes, and brilliant execution of Chinese sculpture and comment on how the country’s culture nurtured the practical and intellectual choices that shaped its sculptural traditions over the millennia.

About the Author

Angela Falco Howard is professor of Asian art at Rutgers University and former special consultant in Chinese Buddhist art at The Metropolitan Museum of Art, New York. Li Song is the former editor of Fine Art Studies (Beijing) and was editor in chief of the volume on sculpture in the Encyclopedia of China. Wu Hung is Harrie A. Vanderstappen Distinguished Service Professor in Chinese Art History and director of the Center for the Art of Asia at the University of Chicago. Yang Hong is professor and research fellow at the Institute of Archaeology, Chinese Academy of Social Sciences, and senior editor of Cultural Relics.

Incomplete and chaotic, but still somewhat useful

This is an encyclopaedic work covering an immense field that still leaves rather several important areas untouched, or treated only cursorily. It is essentially a series of essays on various periods and genres of Chinese sculpture by various scholars each writing on his field of interest without, it seems, any editor pulling the various sections together or making sure that all important areas are covered. For example, the treatment of Song dynasty sculpture discusses almost exclusively works in stone, and devotes only a page or two to works in wood, which are strongly represented in most major museum collections and present a perplexing panoply of styles and iconographical characteristics.

Equally unfortunate is the separate treatment by different authors of different genres of sculpture from the same period, without relating one to the other. For example, there is a fairly detailed discussion of terra cotta tomb figures during the Northern and Southern and Sui dynasties; the Buddhist stone sculpture from the same period is discussed in a separate chapter in a different section of the book. Nowhere in the book are these separate genres from the same period related to each other. They are presented as though there were created on two separate planets.

Ms Falco Howard is clearly the major author and most accomplished scholar contributing to this volume, and her discussions are frequently quite illuminating. She is, however, very much a specialist, and seldom relates the material under discussion to other contemporary genres or cultural phenomena. Moreover, she frequently gets side tracked into endless discussions on temple architecture, which is quite marginal to the understanding of the sculpture, or, if there is indeed a relationship, Ms Falco Howard doesn't make it clear.

Nevertheless, her contributions are substantially superior to those of the other authors, whose contributions often fail to mention important works and even genres. Frequently, the English is stilted and unclear.

Why three stars (instead of two or one)? Lots of great pictures, and Ms Falco Howard can, at times, be insightful.

A reference work for anyone captivated by Chinese art

This is a superb volume; an absolute 'must' for anyone seriously interested in the history and development of Chinese sculpture. If its heft and cost put you off (521 pages), I can assure you that it's more than worth its weight in the information, insights, and excellent illustrations. Rarely does one find a volume on this subject that includes bronze, wood and stone sculptures that includes so much useful information. Enhancing one's understanding of the evolution of sculpture in China are references to the events in China's history that have caused the stylistic or iconographic changes documented. Its authors are all respected experts in their fields but Angela Falco Howard, a special consultant in Chinese Buddhist art at the Metropolitan Museum, stands out as a particularly hard-working, dedicated scholar who not only knows her subject but writes extraordinarily well. Her knowledge of early China (particularly from the Han to the Tang) is formidable and her other major volume on early China is also highly recommended (unfortunately, a smaller former work on the Imagery of the Cosmological Buddha is out of print and very hard to find). If there are any docents or lovers of Chinese art out there, you are forewarned: this volume is so rich in useful information that it will be a classic you will want to return to over and over again. Just buy it.

A FASCINATING, BRIEF HISTORY OF THE CHRISTMAS TREE

Bernd Brunner is "a freelance writer who often explores the intersection of cultural history and and history of science in his writings," such as Moon: A Brief History, Bears: A Brief History, The Ocean at Home: An Illustrated History of the Aquarium, etc.

He wrote in the first chapter of this 2012 book, "Of course, trees are not normally found in houses, nor are they decorated... But the tree in this book usually has only its crown and trunk---and its place is in the home. A wholly remarkable tree, and one in need of an explanation. Although now inseparable from Christmas for us, the tree isn't found in this form in early Christianity at all. It is missing even from church songs and prayers. Something mysterious surrounds this tree that first appeared in the German cultural context, before it literally branched out... capturing the imagination of many people. This book also tells a small global story. What drove people to go off into the forest, chop down a tree, put it in their house, and decorate it in the first place? Is it really just a pagan remnant---as conventional wisdom has it---or is the history behind it more complex?" (Pg. 1-3)

He explains, "The wood wrought from trees is also found in the rituals of many cultures. It has been used for thousands of years in celebrations of the winter solstice---the so-called Yuletide---in northern Europe... it was the symbolical equivalent of the living tree. These rituals probably began as elements of a fertility myth... In time, these pre-Christian rituals came to be associated with the Christmas season, in particular the revels of Twelfth Night, on January 5, the eve of Epiphany." (Pg. 11)

He suggests, "A link can be made between the ritual of our Christmas tree and the paradise play, which had existed since the Middle Ages, even before the nativity play... Creation plays presented Adam and Eve... Also onstage, of course, was a green tree of paradise, decorated with apples and communion hosts. The paradise play, performed on Christmas Eve... begins to transcend the religious context of the play and move toward a role in the Christmas celebrations of the guilds." (Pg. 15-16)

He observes, "For a long time the Christmas tree in Germany was considered Protestant---a ... Luther tree---and the aversion of many Catholics went so far that at the end of the nineteenth century many simply called Protestantism the 'Tannenbaum religion.' ... [But] In the middle of the nineteenth century Christmas trees were already found in churches---decorated with angels, crosses, wafers, and straw stars. These last were meant to represent the Star of Bethlehem while also reminding the viewers of the straw in the manger." (Pg. 31)

He notes, "The American way of celebrating Christmas is relatively recent, evolving in the latter part of the nineteenth century. In the United States the roots of the Christmas tree reach back to the early 1800s---perhaps not as far as we might guess, given the ubiquity of German immigrants in early America. Few seem to have brought the custom along... In any case, such an icon surely would have been reviled by the Puritans, who associated evergreens with heathen superstition. In fact, even Christmas was denounced as an artificial invention without any biblical warrant." (Pg. 52) Later, he adds, "some American Christians believe to this day that the Christmas tree is a pagan and sinful custom... Some base their stance on the Book of Jeremiah, chapter 10... Defenders of the Christmas tree would argue, though, that the tree Jeremiah refers to is an idol, and the decorated Christmas tree is not. If it were, would its worshippers simply thrown it away at the end of the Christmas season? Most Christians enjoy the tree with a clear conscience." (Pg. 60-61)

He says, "some yuletide celebrants are careful to refer to the 'holiday tree' rather than the 'Christmas tree,' precisely to guard against giving offense to those who don't celebrate the Christian feast. But whatever the tree is called, the effects it unleashes...remain somewhat unpredictable... As a Christian symbol the tree inspires a quietude, reflectiveness, and joy in places where the story of Christmas is known and prized. In contrast, where the story is not part of the culture, the tree may elicit resistance, or may simply take on layers of meaning unrelated to those that Christians attribute to it." (Pg. 78-80)

He concludes, "Was the Christmas tree something consciously and deliberately 'invented'? Was someone searching for it? Probably not, but it was found nonetheless... Let us assume that the nameless inventor of the Christmas tree knew about the mythical trees of the past and the old heathen customs... the Christian paradise play... played a decisive role in the emergence of the Christmas tree... In a certain sense the evolution of the tree is but a repetition of the development of Christmas itself---a celebration that also came into the world incomplete, with roots deep in the mythologies of various Eurasian peoples, and only slowly came into its own." (Pg. 90-91)

This is an excellent study of the history of the Christmas tree and the various traditions around it, that will be of great interest to all lovers of Christmas history and lore.

Depicting emperors and kings, heroic women, filial sons, and mythological subjects, these famous carved and engraved reliefs may have been intended to reflect such basic themes as loyalty to the emperor, filial piety, and wifely devotion; centuries later, they vividly bring to life the art, social conditions, and Confucian ideology of the Eastern Han.This generously illustrated book examines the stone slabs and their rubbings as artifacts with a complex cultural history from the second century to the present, and addresses questions about the traditional identification of the structures as Han dynasty shrines of the Wu family. Written by a team of distinguished scholars in the fields of Chinese art and history, the book includes a novel examination of Han burial items in relation to burial belief, pictorial carvings, and funerary architecture.

This is a wonderfully esoteric exhibition catalog, suitable for reading in bed all day when there's a blizzard raging outside. Make a cup of green tea and enjoy. The articles are really good, and the Han Dynasty artifacts that illuminate the period are carefully chosen. It's a thumper, but worth the price.

After deciding to read the crusade histories in chronological order, I began with Thomas Asbridges's excellent The First Crusade. For the second crusade, the choices were much more limited. Jonathan Phillips has provided a dense, scholarly and overall excellent text on this comparatively understudied event. The three major theatres of war are covered (the Levant, of course; and side excursions to Portugal/Spain and the Baltic coast of northern Germany/Denmark). The fact that the Second Crusade was largely an embarrassing failure for the major protagonists (Conrad III of Germany, Louis VII of France) meant that it was not discussed as much either by contemporaries compiling their respective histories of the time or the mainly western Euro-centric historians seeking to flaunt their superiority over other races. Phillips provides a comprehensive overview of the events with an astonishing compilation of evidence. While there is certainly a need for a major new scholarly text of the second crusade, the armchair historians among us need to concentrate hard to assimilate the wealth of information. I agree with earlier reviewers that parts of the book are not particularly easy going but I guess this is a text that you will (need to) revisit several times to appreciate the nuances of the relationships of the various characters. One minor quibble is that only one chapter each are devoted to the Spanish and Baltic campaigns, although this may reflect a dearth of primary sources. Overall an excellent book that I shall look forward to re-reading in due course.

Scholarly and Academic... But Where's the Narrative?

If you enjoyed Jonathan Phillips' treatment of the Fourth Crusade ("The Fourth Crusade and the Sack of Constantinople") and you expect more of the same from his treatment of the Second Crusade, prepare to be disappointed.

Phillips' book on the Fourth Crusade was (and still is) one of my most treasured history books. The narrative was engaging and the characters were memorable (who can forget the venerable, charismatic doge of Venice?). It was high drama. It was narrative history in top form. The same, sadly, cannot be said of Phillip's latest book on the crusades: "The Second Crusade: Extending the Frontiers of Christendom."

In a nutshell, this book did not fulfill my expectations-- expectations which had been established by reading Phillips' previous Crusades book. Phillips' wrote engaging narrative history in "The Fourth Crusade," and I expected a similar tone and treatment in his book on the Second Crusade. Unfortunately, "The Second Crusade" is not what I expected. I would not call it "narrative history." Rather, I would label it "scholarly history": there is much less emphasis on telling the story of the Second Crusade, and far greater emphasis on examining sources, dissecting speeches and charters, and, in the end, writing more *about* the story rather than just telling the story.

Phillips' "The Second Crusade" commits the heartbreaking crime of turning what could have been a fascinating story into nothing more than a list of names, places, dates, and events. It is all the more agonizing because Phillips' previous book on the Fourth Crusade was the epitome of great narrative history. What happened to that great writing? Why the drastic change in tone from "narrative" to "scholarly"? Only Phillips has the answers.

I gave this book 3 stars because, despite all of its narrative shortcomings, Phillips clearly conducted exceptional and groundbreaking research to compose this book. And, in the end, I did walk away with firm understanding of the Second Crusade-- an event that I never really understood before, despite reading many other books on the Crusades. Disappointingly, I had to wade through the muck and mire of sloggish "scholarly" writing to gain that understanding. The book received 3 stars (rather than 2) because there does exist a stretch of 60 pages (concerning the failed siege of Damascus) that revives the lively narrative style of Phillips' book on the Fourth Crusade. It feels like a breath of cool, fresh air after being stuck in 200 pages of steaming desert. This may sound like harsh criticism, but it's just my honest, personal appraisal.

In the end, all the facts are present in this book, but the dramatic narrative that makes history so fascinating is not. If you want a scholarly analysis of the Second Crusade, buy this book. An academic approach to historical writing is a necessary and respectable enterprise. But if you are looking for captivating narrative history, skip this book.

A Great Artist -- A Ridiculous Book

The author is an 'art historian and psychoanalyst.' That should make you suspicious immediately. Wilson ignores what Giacometti said about his work and his life and posits absurd Freudian mumbo-jumbo to explain this complex man of genius. For example, Giacometti told biographer James Lord that he did not have homosexual desires. Indeed, Lord (an openly gay man himself)found no evidence whatsoever that Giacometti was not hetrosexual. But Wilson manufactures absurd reasons to insist that he was, in line with Freudian doctrine: Freudians insist, of course, that someone like Giacometti (or you or me) does not really know himself -- only the analyst can uncover the unconscious drives behind our every thought and move. What is amazing is not that a small group of psychoanalysts survives, but that the Viennese quack's nonsense is believed at all today.

As another reviewer pointed out, Wilson's leaps of logic (illogic, really) make her case -- and her book -- ridiculous. There are fine books on Giacometti out there -- Lord's biography is a good starting point -- read those instead.

Wilson's Giacometti and the vital necessity of art

This biographical work is an exquisite study of the artist and of the vital necessity of his work to himself and to us, his audience. Wilson traces his life with a sensitivity that matches its history of loss and trauma while weaving it into an emotionally attuned connection to his work. The effect is an indelibly affecting portrait of this quintessential 20th century artist. This portrayal blends the best traditions of the psychoanalytic method of examining a life with appreciation of the artist's work on aesthetic and art historical grounds. The author brings to it a richly textured language, which avoids the possible pitfalls of formulaic interpreting, and instead brings to life the artist's personal and artistic existence. This feels particularly satisfying because it echoes Giacometti's own accomplishment: a rendering of human fragility and yet transcending it, and helping us transcend it through art.

I have been doing extensive research on Giacometti, and this is one of the worst books I have come across. The author clearly has done a good deal of research, and this book may be good for you if you can weed out her ridiculous leaps of logic. She seems almost obsessed with demonstrating his sexual deviancy, at times in excrutiating ways. Besides the absurd psychoanalytic portrait she portrays (which is probably the basis for her contrived leaps in logic), the writing is pompous and pretentiously self assured. Here are some gems:

"Head of a Man on a Rod is usually discussed in terms of the terror Giacometti felt when he saw the Dutchman die...but the cavernously open mouth of the work may also convey unconscious homoerotic longings to be orally penetrated."

"After the failure of Giacometti's much publicized attempt to develop a mutually satisfying loving relationship with a woman...he split all womankind into two. Women could either be idealized, untouchable figures with whom he could have intellectual exchanges on the model of his mother; or they could be subordinates who he could dominate..."

"Giacometti's uneasiness with touching could also help explain his artistic preferences...Giacometti had not been well held as an infant or young boy, and it might have been too painful to see hands holding children with loving gestures"

Mitman directs steely, twenth-twenty insight at popular misapprehensions, past and present, of the causes and cures of allergies, hay fever and asthma, in particular. He notes that in the latter nineteenth century, Americans considered hay fever a curse exclusive to white, upper-class males. They knew this because these "hay feverites" were the only persons who took lengthy, annual "hay fever holidays" at tony resorts in the White Mountains and on Mackinac Island. It was later recognized that allergies afflict poor, nonwhite populations with equal and sometimes greater ferocity. When asthma sufferers sought the healthy clime of Tucson, they imported Bermuda grass, evergreens, and sumac trees, to say nothing of industrial pollution and traffic congestion. Not surprisingly, allergy symptoms reprised. Chemical warfare brought its own problems when hay fever proliferated despite widespread, government-mandated herbicidal assaults on ragweed, and chemicals used to deliver breath-saving drugs were proven to be damaging to the ecology. Full of the wisdom of lessons learned as well as of noted authorities, Mitman's thoughtful presentation is nothing to sneeze at. History of Allery and Asthma treatments 1800-present

This book gave me an appreciation for all of the knowledge that has been accumulated from the 1800s to the present on coping and treating allergies and asthma.

The book describes the late 1800s and early 1900s when fortunate allergy sufferers could travel to various locations during pollen season to escape the "hay fever" curse that visited them each year.

The book covers:

History and background of the treatment of allergies using "allergy shots" in the early 1900s.

The benefit of air conditioning had for those fortunate enough to have it in the 1920s and 1930s.

Correlations between "cockroaches" and asthma occurance, and "dust mite" feces and allergy occurance in sensitive individuals. Discusses how these links were found by various studies.

The introduction of pollen/dust air filters to treat patients who were unable to afford air conditioning.

The introduction of antihistimines and inhalers for the treatment of allergies and asthma. The developent of dramamine to treat "sea sickness" and how it was derived from allergy/asthma medicines.

As an allergy sufferer, I appreciated learning more about the history of allergy/asthma treatment. This book should be of interest to anyone suffering from allergies or asthma to give them an appreciation of how far we have come in the treatment of these conditions.

God Bless You, America: A Gesundheit to Change the Land

"A low-grade headache, right at the line of my eyes. And a scratchy throat." I whine to my mother on the other end of the line. Throughout Gregg Mitman's Breathing Space: How allergies shape our lives and landscapes, I scoffed the physical weakness of hay fever suffering elitists turned scientists or entrepreneurs or druggists. That is, until today when I was reminded of my own allergy to the mitigated air quality of my town, which is not unlike any other town in the United States: it borders a more "wild" area, is gridded with Bermuda and Kentucky grasses, and finds financial support in a sundry of industries. This town has housing projects and climate-controlled offices and immigrants, both herb and hominid, all ordinary places and spaces and people which Mitman unveils as somehow marginalized by a drive to eradicate that which ails us: allergens.

Though he blows plot secrets in the introduction, Mitman's surprises are in his prose and humor, despite the high stakes: that the "increased technological optimism [made] Americans confident in their ability to rid the landscape of allergy" also enabled the population to believe and to consume as if they could create a pristine, non-combative interior landscape, both in their homes and within the bounds of the body (7). These major themes are best played out in the chapters "On the Home Front," a history of the innovations to cleanse our personal and private spaces, "Choking Cities," a stab at the hypocrisy of American indifference to their own inner-city citizens' suffering while sending children from all over the world to high-cost, remote "scratch test centers," both bastions of relief and experiment. Though the theme of environmental justice runs like a nose throughout the book, beginning with a hilarious anecdote on a chain-wielding Mr. T, he takes a stronger critical look at the governmental institutions that enabled the architecture and bureaucracy of interior allergy than other texts in the field.

Mitman's ability to synthesize not only the complex political, economic, and social climates but the history of medicine and technology make this text useful for pre-med and post-medicated people alike. An undergraduate course might find specific chapters useful for grounding what is now the post-modern perspective: there is no outside. As an ecology student, I longed for more extensive histories on plants, production, and a kind of Pollanesque perspective, as well as denser chemical discussion in lieu of drawn out stories of obscure poets sniffling. Also, the rhetorical links of ragweed, also called "river-rat" and "slum dweller," to less-desirable human populations, as Peter Coates has made opaque, seemed under utilized (55). Still, Mitman's collection of images, affection for irony and overwhelming knowledge of medicine legitimate this book as a supporter of what is most important: "the evolving relationship of body and place" (250).

Interesting but hard going

I find farming and plant genetics and history fascinating and I am very
much enjoying this book, which covers and connects these topics. It's
quite hard to read, though, the book seems intended as a textbook, it's
the opposite of the kind of book that makes a difficult topic accessible
for the layperson. It covers (I assume) all the other reseach on given
subjects, with citations, so it's very easy to get lost in masses of
data and technical terms, and there's not much assessment and conclusion
to make the data understandable. But in the absense of good popular
books that pull these topics together in detail, I can recommend it to
the dedicated.
